2 large garlic heads
2 tablespoons olive oil
2 tablespoons butter
1 onion, chopped
1 shallot, chopped
1 medium potato, peeled and diced
4 cups chicken or vegetable broth
1 cup heavy cream
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon thyme
4 cups baguette or sourdough, cubed
3 tablespoons olive oil or melted butter (for croutons)
2 cloves garlic, minced
1 teaspoon Italian herbs (optional, for croutons)
Preheat oven to 400°F (200°C). Slice tops off garlic heads, drizzle with olive oil, wrap in foil, and roast 35–40 minutes until soft. Squeeze cloves from skins.
In large pot, melt butter with olive oil. Add onion, shallot, and potato. Sauté about 7 minutes. Add roasted garlic, broth, thyme, salt, and pepper. Simmer 20 minutes.
Blend soup until smooth. Stir in heavy cream; adjust seasoning.
Toss bread cubes with oil/butter, minced garlic, and herbs. Bake at 375°F (190°C) for 12–15 minutes, tossing halfway, until golden and crisp.
Serve hot soup topped with croutons and fresh parsley.
